Food and nutrients

Nutrition is how organisms obtain and use food. The food we eat contains seven classes of nutrients, each with a job in the body.

NutrientMain jobSources
Carbohydratesenergymaize, rice, bread, cassava, bananas
Proteinsgrowth and repairmeat, fish, eggs, beans, milk
Fats and oilsstored energy, insulationgroundnuts, cooking oil, butter
Vitaminsprotect against disease and keep tissues healthyfruits, vegetables
Mineralsbuild bones and teeth, make bloodmilk, leafy vegetables, fish
Waterreactions, transport, temperature controldrinks, fruits
Fibre (roughage)keeps food moving through the gutwhole grains, vegetables

Energy in food

C, P and F are the grams of carbohydrate, protein and fat. Carbohydrate and protein give about 17 kJ per gram; fat gives about 37 kJ per gram.

How plants make food

Green plants are autotrophs: they make their own food by photosynthesis. Animals are heterotrophs: they must eat other organisms.

Photosynthesis: what goes in and what comes outA green leaf in the middle. Sunlight energy, carbon dioxide from the air and water from the roots go in. Glucose and oxygen come out.sunlightcarbon dioxide (air)water (from the roots)oxygenglucose (food)light + carbon dioxide + water → glucose + oxygen

Digestion

Digestion breaks large insoluble food molecules into small soluble ones that can be absorbed into the blood. Enzymes speed it up: amylase digests starch, protease digests protein and lipase digests fat.

The human digestive systemThe food canal runs from the mouth through the oesophagus to the stomach, small intestine, large intestine and rectum. The liver and pancreas lie beside it and add digestive juices.mouthoesophagusstomachliverpancreassmall intestinelarge intestinerectum
Part of the gutWhat happens there
MouthTeeth chew the food. Saliva contains amylase, which starts to digest starch.
OesophagusMuscles push the food down to the stomach (peristalsis).
StomachAcid kills germs. Protease starts to digest protein.
Small intestineDigestion is finished. Digested food is absorbed into the blood through the villi.
Liver and pancreasThe liver makes bile, which helps to digest fat. The pancreas makes digestive enzymes.
Large intestineWater is absorbed from the leftovers.
Rectum and anusFaeces are stored, then egested.
